The Governors visit coincided with our annual chef's tasting and education morning.
The day started out crisp and clear, a real blessing in the turbulent
weather that can be Spring. Our chefs arrived bright and early for a
tour of the grove, learning from Sue how we manage the trees and harvest
our olives.
Then we moved into the shed for a run down on how we process our olives for oil. Explaining the machinery, and how we process our extra virgin olive oil to the highest of standards and ethics, keeping to the Australian code of practice.
After the tour of the plant, we all had a seat for the highlight, the tasting of our new season extra virgin olive oils.
It was a wonderful session exploring the different flavours and nuances that naturally occur from one variety of olive to the next.
A table of gorgeous local produce was laid out for our visitors afterwards. Complimenting Camilo's gorgeous olive oils, tapenade, olive jam and chocolate mousse' there were, cheeses and yoghurts from Meredith Dairy, cold cuts from Meredith Free Range Pork, and delicious coffee enthusiastically supplied by Nathan from the Coffee Cartel
